Analysing a recipe means summing the nutrition of its ingredients and dividing by the number of servings. Both halves of that sentence hide a problem: ingredient data is a database average rather than a measurement of your specific ingredients, and a serving is whatever you decide it is. Understanding where the error comes from is what makes the output useful rather than falsely precise.
Формула
Total nutrient = sum over ingredients of (amount in grams x nutrient per 100 g / 100)
Per serving = total / number of servings
Yield-adjusted per serving = total / cooked weight, then scaled to the served portion - Nutrient values per 100 g come from a food composition database such as USDA FoodData Central
- Cooked weight differs from raw weight, mostly through water loss
Standard recipe analysis method. Nutrient reference values from USDA FoodData Central.
Weigh ingredients, do not measure them
Volume measures are the largest avoidable source of error in recipe analysis. A cup of flour can vary by 20 percent or more depending on whether it was scooped or spooned and how settled it was, and that variation flows directly into the calorie total. Weighing in grams removes it entirely, and takes less time than levelling a cup.
The same applies to fats and to anything measured by the spoonful. Oil poured freehand into a pan is routinely double what a recipe specifies, and at roughly 120 calories per tablespoon it is often the single largest discrepancy between a calculated figure and what was actually eaten.
- Weigh in grams wherever possible, including liquids.
- Account for oil absorbed during frying rather than the oil put in the pan, since much of it remains behind.
The yield problem
Cooking changes weight, mostly through water. A dish that goes into the oven at 1200 g may come out at 950 g, and the nutrients have not gone anywhere, they are simply more concentrated per gram. If you divide by servings this does not matter. If you portion by weight, it matters a great deal, because 200 g of the cooked dish contains more than 200 g of the raw mixture would have.
The practical approach is to weigh the finished dish, then divide the total nutrition by that cooked weight to get a per-gram figure. Portions can then be weighed and converted accurately, which is the only way to get a reliable number when servings are not uniform.
- Meat loses roughly a quarter of its weight in cooking, mostly water and rendered fat.
- Dried grains and legumes roughly double or triple in weight when cooked, which is why using the raw value for a cooked portion overstates it several-fold.
How much error to expect
Even done carefully, recipe analysis carries meaningful uncertainty. Food composition databases give averages across samples, and real foods vary with variety, season, ripeness, feed and processing. Fat content of minced meat, the sugar in a piece of fruit and the salt in a stock cube can all differ substantially from the database figure.
The reasonable expectation is that a carefully weighed home recipe analysis is accurate to within roughly 10 to 20 percent, and that is fine for most purposes. It is not adequate for anything requiring precision, such as carbohydrate counting for insulin dosing, where the label on a packaged product or a dietitian-verified figure is the safer basis.
- Database values are population averages. Your specific ingredients differ, sometimes substantially, particularly for fat content in meat and sugar in fruit.
- Volume measures introduce large errors. A cup of flour varies by 20 percent or more depending on how it was filled.
- Cooking changes weight through water loss and fat rendering, so raw and cooked figures are not interchangeable per gram.
- Servings are self-defined. A calculated per-serving figure is only meaningful if portions are actually equal or are weighed.
- Carefully done, expect roughly 10 to 20 percent uncertainty. That is adequate for general tracking and not adequate for insulin dose calculation.
- The calculator cannot know about oil left in the pan, marinade discarded, or how much of a sauce was actually served.
How do I calculate calories in a homemade recipe?
Sum the nutrition of every ingredient by weight, then divide by servings. For accuracy, weigh ingredients in grams rather than using cups, and weigh the finished dish so you can convert per gram rather than relying on equal portions.
Should I use raw or cooked ingredient values?
Be consistent and know which you are using. Cooking mostly removes water, concentrating nutrients per gram. Using a raw value for a cooked portion of grains or legumes overstates it several-fold, because they absorb water and roughly double or triple in weight.
How accurate is recipe nutrition analysis?
Carefully done with weighed ingredients, roughly 10 to 20 percent. Database values are averages, and real ingredients vary. That is adequate for general tracking but not for carbohydrate counting for insulin dosing.
Why do cup measurements cause errors?
Because volume does not fix mass. A cup of flour varies by 20 percent or more depending on whether it was scooped or spooned and how settled it was, and that flows straight into the calorie total. Weighing removes the problem.
How should I handle oil used for frying?
Count what the food absorbed, not what went into the pan, since a substantial share remains behind. Weighing the pan with oil before and after is the practical way to estimate it, and matters because oil is around 120 calories per tablespoon.
